Today's lunch highlight was a grilled tomato sandwich with a little mayo on the inside and slices of Swiss and American cheese - thick slices of fresh tomato - and buttered/grilled on the outside. Outstanding! Dripping with melted cheesey, tomato wonderfulness!

Dinner last night was a sandwich on a crunchy roll with mozzarella, Jersey tomato slices, fresh basil and Arugala with a Balsamic vinegarette.

One of my favorite summer sandwiches.

I ate so many one year in my 20's I broke out in a rash.  I try to moderate myself now.  A good fresh acidy tomato is absolutely my favorite food.  Rutgers is my tomato and a friend starts me some every year in her basement.

I like mine with plain white bread, lots of good mayo, and lots of salt and pepper on the tomato!

My favorite sandwich is a grilled cheese with American cheese, Smoked Provolone cheese, sliced tomatoes with lemon pepper and bacon...need I say more?!?!
