I need some ideas for an easy salad to feed 6-8 at a large potluck. TIA

Here's a recent thread on "layered salads". I've done them in the past (you can Google various versions) and they are delicious.

Broccoli Salad. There are amazing recipes online. Has broccoli, cherry tomatoes, bacon, raisins, cashews in a great dressing. You can change up the ingredients according to your taste. I make it the day before and let it marinade over night.

How about a Waldorf Salad? Very easy to make, makes a nice presentation and very versatile. There are so many versions, you can add or delete ingredients to your taste.

Simple Waldorf Salad:

1/2 cup chopped, slightly toasted walnuts

1/2 cup celery, thinly sliced

1/2 cup red seedless grapes, sliced (could add or substitute 1/4 cup of raisins or craisins)

1 sweet apple, cored & chopped

3 Tbsp mayonnaise (or plain yogurt)

1 Tbsp fresh lemon juice

Salt & Pepper

Lettuce leaves (Butter lettuce makes a nice presentation)

Directions: In a medium sized bowl, whisk together the mayo (or yogurt) and the lemon juice. Add 1/2 tsp salt, 1/4 ts fresh ground pepper. Mix in the chopped apple, celery, grapes, and walnuts. Serve over a bed of fresh lettuce. Serves 4.

Note: Recipe can easily be doubled or tripled. I sometimes substitute cashew nuts for the walnuts. I like a mix of apples for flavor so often use a sweet red apple and a granny smith apple.

my first thought was broccoli salad! I bought some crowns Sunday to make one this week. I make it with vidalia onions, craisins, sunflower seeds, mayo with added sugar and finely chopped broccoli. For those that eat meat, add in cooked, crumbled bacon.

This recipe can be made without the chicken added. Easy to double also. SPINACH SALAD with PASTA........2 cups Penne Noodles, cooked and drained.........3 cups fresh Spinach, torn........1 cup cooked chicken, cut into strips.......1 cup sliced Strawberries.......1/2 cup sliced Red Onion......1/3 cup coarsely chopped Walnuts..........1/4 cup Parmesan Cheese........1/2 cup bottled Balsamic Viniagrette Salad Dressing........Mix together cooked pasta and spinach....add rest of ingredients and mix gently. When ready to serve, drizzle with dressing and toss lightly again.

I would just make a tossed salad with a lot of different cut up veggies and take along the dressings on the side.

I would do a 7-layer salad. We don't see a lot of them anymore where I live. I always liked those.

POSTING from an IPad.......... How about a different take on a salad? This is different, And pretty too....... 1-2 pkgs. refrigerated cheese filled tortellini - prepared....1 pint cherry tomatoes.....1 cup pimento filled olives (pickles also work).....1 lb. prosciutto or salami slices, folded in half then in half again.....1 lb. provolone or mozzarella cut into 1"cubes - or buy small mozzarella balls in the deli.....1 14oz. Artichoke hearts cut into 1/4" chunks.....16oz. Italian dressing.......... Thread ingredients on a 6" skewer in the order given above...... That's it!....Looks great if all ingredients are about the same size........Place side by side in a 9x13 dish or Tupperware container and Drizzle with dressing to marinate for several hours, or overnight........Cover and chill 4-6 hours........Drain and serve on dish or platter........... NOTE: looks pretty placed on shredded lettuce covered dish to absorb excess dressing. Sent from my iPad

I agree that the classic 7 layer salad would be a hit...easy to make and always makes a beautiful presentation if you can put it in a trifle bowl or other tall, clear glass bowl.
