I cooked a 2.8 lb one today, a round cut.
I cooked it in my instantpot, 70 minutes, slow release 15 minutes, it was delicious. I cooked carrots and cabbage in the i-pot with juice from the c.beef. I used beef broth for the liquid.

So much for my plan to try an oven method. I ended up simmering our corned our corned beef with the packaged seasons, half an onion, a couple ribs of celery, and a handful of baby carrots. I ended up with a beautiful and tasty result. Leftovers are on tomorrow's menu. I'm hoping my local grocery store still has some corned beef briskets left so I can get one or two for the freezer. I'll stop today and check.

Every year it seems there is a thread about cooking CB methods....I now keep @Mothertrucker 's method on my computer for easy posting! LOL
I like cooking the veggies sep anyways..dislike boiled veggies.
I can roast the carrots and saute the cabbage (shredded) w/ onions and bacon etc. and it finally gets eaten!
No one ever ate the boiled hunks of cabbage anyways!
