Quick and Easy Pasta Salad

Adapted my own recipe for this one.

 

12 oz penne pasta cooked

3-4 tomatoes cut up in bite size pieces or use cut cherry tomatoes

6 pcs string cheese each piece cut up in about 8 pcs

2-3 oz fresh basil sliced into toothpick size pcs

1/2 cup grated parmesean (good stuff, not Kraft)

1 bunch green onion sliced into thin pcs

1/2 cup virgin olive oil

 

 

 

Combine all the ingrediants, toss and put in the frig to cool.

Yesterday I made this, it was good then today it was even better.  You can splash more olive oil in the pasta salad to "loosen" it up but don't over do it.  

 ....and of course, salt and pepper to taste.

The combination of the fresh basil and parm make this salad.

 

I read a recipe that serves this warm but I adapted the recipe for a cold salad.  Makes a big bowl, enough for about 12.

Hey, you've inspired me!

 

I'm stuck in a rut with my pasta salad seasoning.  I'm going to try adding some fresh parm and fresh herbs.  Green onion is a nice touch, too.

 

I'm going to add some items to my grocery list for tomorrow and surprise DH with something like this, maybe alongside a burger.  Yum!

Is there any vinegar or lemon juice in it?  Usually you have some acid to go with the oil.

Made this with some tomatoes I needed to use up and have basil running out my ears. This recipe is a KEEPER! Thanks for posting.
