Re: Question About Bacon Grease

[ Edited ]

Mom never cooked w/bacon grease or saved it. Nor do I. Don't care for the smell or taste of bacon. I am a vegetarian.

However, years ago the Women's Society of the church I belonged to ( I was a little kid)

would make and sell pizzas on Friday. It was very popular and many would pick up one or two on their way home from work. A dear relative of mine saved the grease (from bacon) and that was used to grease the pans to bake the pizza.

Re: Question About Bacon Grease

It seems strange now but my mother always had the aluminum "grease" can like @ECBG mentioned. A friend's grandmother had the canister set in the same material, it didn't have the grease can but I wish it did; when she passed, she knew I liked the set so she gave it to me. My mother's family, from the south, cooked everything in bacon grease. She had six brothers who lived from their 60s to their 90s so, while it's probably not very healthy, guess there are other things more dangerous. I can't make cornbread without heating up bacon grease in my cast iron skillet, makes it very crispy. I don't think I'd mix bacon & sausage grease together but, as someone else mentioned, there's not much grease left with today's sausage. I worked with a Gullah lady who put at least a teaspoon of bacon grease in everything savory she ever cooked.

Re: Question About Bacon Grease

I only save bacon grease, when I need it,  I always have cooked bacon on hand, but we can't use the grease as fast as needed to keep up.  Sometimes I have to pitch it and that bothers me, to a degree.  I keep it in a glass jar with screw on lid.  Yiu can save the chicken grease but don't mix them. Bacon grease has long been indefinitely kept in containers on the kitchen counter or in a cabinet. Chicken grease, OTOH, does not keep indefinitely and requires refrigeration. You can save it, but store it separately and keep it in the fridge.  Use it within a couple of weeks or get rid of it.

For collards & string beans fatback adds more flavor than bacon grease.

@Mz iMac And ham!  Woman LOL I love a good smoky piece of ham in beans! I like all kinds of dried beans, but my favorites are those huge lima beans and pinto beans, or red (kidney) beans and rice with onions, garlic and peppers!

You made me hungry!  We just cooked a big beef roast yesterday low and slow with chilis, rotel, dried beans and, garlic and salt and pepper around it--let it go all day and it was so good!

Good we have leftovers Mz iMac or I'd be cooking now!

Ohhhh, that sounds so good! - Never thought to put Beans in the crockpot with a Roast - I always cook my beans with some type of Pork, like a Ham Hock, etc.

Gonna make that on a cold day in January. Smiley Wink

Re: Question About Bacon Grease

Back in the day when I saved bacon grease I washed an empty miracle whip glass jar to use.

Re: Question About Bacon Grease

My mom saved it (she made bacon on Sundays).  She kept it in a stainless bowl, maybe 2 cup size.  No lid.  She used it for eggs and I know fried potatoes.  It was stored in the fridge.  I don't make enough bacon to save it, but it's good in fried potatoes.  Sometimes I cook bacon in the microwave, and no grease.  My mom passed many years ago, but when she passed, my brother wanted that bacon grease bowl.  Maybe it was just good memories.  I think he still has it.

Re: Question About Bacon Grease

i have never thought about saving sausage grease unless i am making some type of soup the same day or adding potatoes to fry.
