When I was a child, we had bacon every morning. Mother saved the grease and used it as seasoning in vegetables. I especially remember how much it improved the taste of green beans.
My grandfather preferred sausage for breakfast with biscuits and gravy. To get her bacon grease, my grandmother would fry two pieces of bacon in the bottom of a saucepan, add green beans, and a whole onion. She removed the onion and the bacon before serving. They were so good!

My mother used a small coffee can to store bacon grease, too. I use a small plastic container with a lid like those disposable Ziploc plastic containers with the twist lock lids. I store it in the refrigerator but you can also freeze it. I've never saved the grease from sausage because there usually isn't enough to bother with.

@Icegoddess I do exactly what my mother did with bacon and other grease: Throw it all away but don't put it down the sink. We didn't use it.

On the farm we had an aluminum grease pot with a drainer.
Things like greens (yum), and dried beans (which I never liked) got a little fat.

Not a saver of bacon grease but I will fry our eggs in it after frying up a batch. I just saw bacon dressing offered from an online store. It looked horrendous with all the grease congealed at the top.

For collards & string beans fatback adds more flavor than bacon grease.

I'm not a keeper of the bacon grease and don't make sausage. But I do recall my mom would save it in an empty margarine or cool whip container after it was cool of course. Clearly this was befor lock n lock and she was not a fan of Tupperware. It did add flavor to fried eggs which is what she'd use it for.

Ugh! My mom NEVER cooked with bacon grease! I would never cook with bacon grease. Sorry, but this is one of the reasons for half our health problems.
