Ok, some specifics:

 

Wusthof, Global or Zwilling are great knives.

 

*A Chef's knife is basic--8" is a good place to start.

*A Nakiri or Vegetable knife is great for chopping veggies and doing other kitchen chores.

*A slicing or long thin knife is great.  It is good for a lot of things.  Thet's where we started.  I utility knife will also do a lot of jobs too.  

 

*From there, a serrated bread knife is something we use a lot.  At least 8" and 10 is even better.

*A boning knife if you cut up chickens or take a lot of fat off cuts of meat is good, but the shorter slicing knives do fine.

*A better paring knife for peeling--bird's beak is nice, any shape that looks useful.

 

Right now Williams-Sonoma  has some great sales on knives.  

 

Don't get the Wusthof Gourmet knives.  Get a good knife with a bolster for weight.  A knife with some weight to it really makes life easier.  Don't buy thin cheap knives.

 

Google knives, read a little, then take a little time to learn how to use them.  Get a good sharpener and use it occasionally!

 

You will be amazed how much easier life in the kitchen is.  And be careful!  You need to start slowly with sharp knives.  I can vouch for that.  But it makes things a lot easier in the kitchen and is worth the investment in money and time.
