They guarantee top quality for a year.  Nothing says they go bad.  Bake a batch and if they aren't good.  Then pitch them.

 

The only thing I wouldn't use past a year is seafood.

Bake one and see if they are worth keeping.

I thought I heard them say that you could freeze them for one year. I would pitch them but first call CS and see if they have any different info.

OP here!

 

So I baked off 6 today, they all baked as normal, beautiful and golden.

After I took them out of the oven 3 of them deflated the other 3 were perfect.  (but I always had problems with some deflating if I removed too soon)

Taste: the 3 that looked fine, tasted fine, great texture no freezer burn or off taste

I'd bake one off and taste it and then decide.

 

There's nothing in a frozen croissant that will make you sick.  It just might not taste good.
