I decided to start baking my own bread again and this past week bought King Arthur Bread Flour.
I made 2 loaves, one quick bread and one yeast bread using bread flour. In both cases I needed much more liquid than the recipe called for. The bread is also more dry, not as tender a crust. In either case, I don't think I over mixed or over kneaded.
Opinions from those who bake bread regularly? Do you really need a bread flour or is this totally unncessary?
