Homemade Chicken Pot Pie, steamed broccoli, & fresh fruit mixture for dessert.

I have a terrific recipe for pastry that's really healthy. It's made with oil and it's delicious. Takes two minutes to hand mix. Would you like it?

Re: Okay Ladies...What's on your Easter Menu?

Hubby and I will be spending the afternoon with DD and her family and we're sharing the cooking. She's making a spiral ham, stuffed sweet potatoes and a corn casserole. I'm bringing an Italian antipasto, a caesar salad and a veggie of some sort.

For dessert, I'm bringing hubby's favorite (his mother's famous Italian Ricotta Cheese Pie) and my favorite (my grandfather's sausage pie) and some pastries.

We're going to throw steaks on the grill, we have not done any outside grilling since Oct. 2013.

It's 2 cups (sifted) (or push through a strainer with a spoon) of plain flour. I use White Lilly because it seems to have the best texture. 1 tsp. salt. 1/2 cup canola oil. 1/4 cup milk. Stir in bowl with a fork. roll between two pieces of waxed paper or parchment the size of your casserole to 1/4 inch thickness. Peel off the top layer of paper, invert over casserole and gently peel paper from pastery.

I have even looked up the measurement for packed flour to equal two cups of sifted and that works fine too.

My Advanced Foods class loved this! It's really flakey and good!

Re: Okay Ladies...What's on your Easter Menu?

Traditional dinner - ham, scalloped potatoes, green beans, relish tray and hot rolls. For dessert I am taking Sarris (Pittsburgh, PA) candy and also making a cherry f l u f f (word not allowed?) I made it years ago. It is light and delicious.

A can of cherry pie filling, container of cool whip, one can crushed pineapple (drain well), 1 can Borden's Sweetened condensed milk, 1/2 cup coconut, 1/2 cup chopped pecans. Mix well and refrigerate overnight. Easy, delicious and light after a heavy Easter meal.

Yum. I want to try it with blueberry pie filling, but not sure if it will mix with the pineapple well. I'm going to stick with the cherry for Easter, but will try the blueberry soon.

My family freezes your cherry salad in flat pans and serves it frozen, cut into squares. A yummy twist!

Oh Maria, we have to have Italian ricotta wheat pie and pizza rustica (meat pie) or it just wouldn't be Easter! I make the pizza rustica every year but buy my ricotta wheat pie from Carlos Bakery In Hoboken. It is to die for, no one makes it as good as he does! Oh and I can't leave there without some cannoils, they are soooooo good!
