Okay Ladies...What's on your Easter Menu?

I love reading and getting new ideas from all of you! Although I usually stick with my traditional ham. scallopped potatoes and green beans, I like trying new, tried and true recipes to accompany it! So let's get started...What's on your Easter Dinner menu?{#emotions_dlg.biggrin}

Very simple here… just four of us. We'll have ham, smashed potatoes and asparagus. Dessert will most likely be my favorite - carrot cake.

ETA: roasted carrots, of course!

Honey Baked ham, mashed potatoes, green beans, cornbread and fresh fruit salad for us.

Dessert will be the Funfetti Bunny Cake made from the recipe on the box. Even though my kids are in their mid to late 20's, they still want this dessert that I made for them when they were little!

Honey Baked Ham, "Thanksgiving" Macaroni and Cheese (Stouffers), potato salad and baked beans. Some kind of cake and pie for dessert.

Same thing as always: Marinated, grilled leg of lamb, rosemary potatoes, Greek salad, spring vegetable (probably asparagus with lemon butter), and hot rolls and butter. My kids insist on this every year.

Most of our family is on a sugar-free regimen, so I'm not sure about dessert.

Whatever the casino's convention center dining room is serving. New venue, they have worked out the kinks and put out a very nice meal. Last year they didn't do ham, but some cut of pork instead. Bet they don't make that mistake this year. Easter is Ham.

Ham and deviled eggs. Nothing else matters. LOL!

Add in mashed potatoes and gravy, cheesy carrot bake, green beans, and rolls to round it out. Probably a colorful Jello cake for dessert.

It would not be Easter without parsnips and Orange Jello with crushed pineapple & shredded carrots. Think called "Sunshine Salad". Parsnips just split, parboil and saute with a little butter.

Cornish game hens, garlic Rice-A-Roni with onions/mushrooms added, asparagus, chick deviled eggs (recipe I saw in these forums, so cute!), pound cake w/pistachio ice cream & berry sorbet - & an Easter basket full of colored hard cooked eggs, almond M&Ms, assorted Jelly Bellies & a chocolate bunny for my best friend who's coming over.

Easter Chicks Deviled Eggs

Ingredients

  • 6 Boiled Eggs
  • 1/4 cup Mayonnaise
  • 1 tbsp Sweet Pickle Relish
  • 2 tsp Mustard
  • Salt and pepper, for taste
  • 1 Mini Carrot
  • 1 Sweet Midget Pickle or you can also use a few pieces of relish.

Instructions

  • Cut small slice off bottom off egg to flatten it so it will stand.
  • Cut zig zag pattern around middle of egg to look like it cracked open.
  • Remove yolks and place in a bowl.
  • Cut carrot so that you end up with 6 small triangles to use as beaks.
  • Cut strip off of pickle and then make 12 small squares to use as eyes.
  • Mash yolks with a fork and stir in mayonnaise, pickle relish, and mustard.
  • Salt and pepper, to taste.
  • Mix until consistency is smooth and creamy.
  • Transfer mixture to zippered bag and clip corner for piping.
  • Pipe mixture into cooked egg whites piping until over full to resemble a chick head sticking out.
  • Place beaks and eyes in place.
  • Top each with the bottom with its top half.
  • You can optionally shred lettuce to resemble grass to display them.
