Daiya makes a delish dairy free mozzarella cheese, I just had some tonight! Many vegetarians I know are dairy free as well. I'm pescatarian myself.

First off, meat doesn't have any flavor.
We add the wonderful sauces & seasonings to make it the
awesome dish we remember.
Secondly, how about using one of the many meat alternatives
out there? Boca Crumbles, Beyond Meat...I mean you can
throw a stick in a regular conventional grocery store (Walmart, etc)
and hit many meat alternatives.
Just your regular tasty meat lasagna recipe you're probably
known for but just replace with meat alternative.
If it's only vegetarian, you're probably still using cow cheese
so I guarantee no one will miss any meat with these alternatives.
Easy Peasy.

If you wanted to go completely vegan, here's an easy recipe
using Daiya cheese & Veganise mayo. I haven't made this recipe
but other Mark Anthony recipes are very tasty. Just basic ingredients.
If anything, maybe this will serve as inspiration!

@jannabelle1 First off, I don't know where one manages to find meat without flavor. That being said, you don't need meat to make a great lasagna.
We make great vegetarian lasagna all the time. You can find vegetarian sauce or make your own. We will use long slices of eggplant, zucchini, yellow squash, along with mushrooms, onions and spinach. Sometimes we use one layer of noodles, sometimes not.
We use jarred sauces or sometimes make our own. Just layer ingredients like you would any lasagna and bake until the veggies are cooked and it is hot and bubbly. Add pesto or herbs in the layering too if you want.
You can get vegetarian substitutes for the cheeses and it works out great. It is one of our favorite summer dishes! In the winter it's good, but not as good as the summer ones with our herb garden additions! ![]()

As a card-carrying carnivore, I will say that we both love vegetarian lasagna. There is no reason for it to be bland. We also don't have a recipe. . . just make it like any lasagna you love and leave out the meat and if you have to the dairy--subsitute 'cause I'm sure you can now days.

I NEVER make my lasagna with meat!! I didn't know it was the norm! My recipe includes a very tasty tomato sauce with ricotta cheese, mozzarella cheese. My mouth is already watering!!
