Mrs. Toms' Rolls page 180 in her cookbook

I was looking at this recipe and it calls for Gold Medal Wondra Flour. I searched online and it comes in a 2 lb box or 13.5 oz canister.

The recipe calls for 1 3/4 lbs of Wondra Flour for her rolls. Some stores don't carry the 2 lb box anymore, stores around me only offer the 13.5 canister. I'd have to buy 3 canisters to get enough flour to make the rolls. I need 28 oz for the recipe to make 5 doz.

Even one canister won't be enough to make 1/2 the recipe. Oh well, if I want to make them I'll have to get 2 canisters of Wondra Flour. I guess that's what I'll do.

The rolls filled with ham, that David ate last night had to be this recipe. They did look good.

The cookbook also has a recipe using the dough to make cinnamon rolls and sticky buns.

did you look online to see if there is a substitute for Wondra?

anytime, I think my Dad used to use it for gravy thickening

usually if you need a substitute for anything in cooking the web will give you something, I needed baking powder and found what to use

I only use Wondra for gravy...thanks for letting me know it came "bigger"!.. I always get the canister, so easy to just shake out...

Both Gold Medal and Pillsbury Shake & Blend instant do come larger. Two of our Big Lots carry the boxes, but I have gotten at Kroger. Most grocery stores will order for you. I bought a couple boxes several weeks ago at BL.

It's handy for many things. It's the ONLY flour I use for flouring fish, chicken, croquettes, crab and lobster cakes. This is what all the better restaurants use for 'flouring' virtually ANYTHING. Great to season and use for dredging meat before browning. Will brown faster and better.

It's also great for 'dusting' counter and pastry board. Unlike regular flour, when dusting with instant flour, it doesn't get all over your hair and the rest of the kitchen. Best thing for dusting cake pans.

Instant flour makes better pie crust because it's low protein. Also crepes and pancakes.

Because instant flour is 'cooked', you don't have to cook out the raw flour taste when preparing things like roux, sauces or gravies.

You can substitute regular flour for instant flour when baking with no problem.

I store instant flour in a small 1 cup round Tupperware container with a top that allows me to pour, shake or spoon. I store the rest in my freezer, as I generally buy 3 or 4 boxes at a time.

Two of our Big Lots carry, but the others don't. Local Kroger doesn't, but the one up in Rome does. But, then I have to drive up to Rome if I want to buy creme fraiche - NONE of our supermarkets or Wally World locally carry it.

I prefer to NOT shop at Kroger at all - I just go to the one in rome because I like their selection of cheese from Murray's in NYC and they do carry the creme fraiche, shallots by the pound and uncooked chorizo. I can't afford to buy groceries at Kroger or WalMart - I'm a Publix shopper.
