I haven't made it for years but I always used oats too. Wet bread just grosses me out and the oats do the job very well without that.

Somewhere I have a recipe I wrote years ago and I added mushrooms and cubed sharp cheddar cheese to mine. Also, in addition to the tomato sauce I put a couple of 'glugs' of ketchup in the recipe. It brought the flavor up wonderfully.

i love mine with a brown gravy or an onion gravy, but this topping sounds so good.....i am tempted to try it!

A topping I did years ago when my kids lived at home, shape a basic low-fat hamburger meatloaf recipe into a round loaf and place into a casserole dish that has a lid, or use foil. (A crockpot would work also, although I'm unsure of the cooking time.) Wisk an undiluted can of tomato soup with 1/4 -1/2 can of milk, so the mixture is thick. Put the soup mixture over top of the meatloaf, cover and bake for an hour @ 350. Serve the 'gravy' that forms with mashed potatoes.

My meatloaf "recipe" is the same as I use for meatballs, so any leftover, I just cut into 2" cubes and throw into the spaghetti sauce.

My topping consists of ketchup(Heinz), brown sugar and balsamic vinegar or glaze. Taste Great!

I have to make two....one regular and a Mexican meatloaf for DH.....ground beef, a packet of taco seasoning mix, egg, finely diced onion, crushed Tostitos, salsa and top with more salsa and jalapeno rings. He loves it spicy!{#emotions_dlg.devil2}

I do that too! My recipe for meatloaf is great lean ground beef and salsa. That's it. Smush it together, form and bake! Put ketchup on top before it is done.
