Our local supermarket's deli often has fresh hot meatloaves on special! I can taste and smell the aroma right now!

LoriMi...Thanks for posting Jenny's website. She has all my favorite polish recipes....potato pancakes, cabbage rolls, salmon patties and a lot more great recipes. Now...I have to make a meatloaf first!

We have a grocery store with a catering dept. and they will also prepare food and put it in the meat section, that you can take home and heat up yourself.

One time I bought a Swiss cheese and mushroom meat loaf mix. It was so good.

I would like to try making that combination myself. I think that the meat mixture was both ground beef and pork. For the binder they used crushed up saltines.

I add some pork sausage or Italian sausage to my meatloaf. I use seasoned bread crumbs, onion and green pepper, whatever seasoning I feel like throwing in along with some ketchup. I don't like "sweet meat" so, no topping of ketchup or brown sugar on mine thank you!

I've never put anything on top of mine, either. I'd not actually even heard of that except for on this board, but it doesn't sound appealing to me. I like to make the dish flavorful so that there is no need to cover it with anything, but I can see how it becomes part of the flavor for some. I also tend to keep sweet and savory separate. Smiley Happy

I grind bacon in mine and us brown sugar oat squares in it. Then I smoke it on the grill.

STUFFING MEATLOAF

1 package Stove Top Stuffing mix, dry
1 c. warm water
1 1/2 lbs. lean ground beef
2 eggs, slightly beaten
1 package onion soup mix

Preheat oven 350°. Coat inside of bundt pan with cooking spray.
Place warm water, onion soup mix and dry stuffing mix in a bowl. Mix well. Let sit for 5 minutes to allow bread time to absorb water.
Add eggs and ground beef. Mix well. Best way to get it blended is by using your hands and incorporating it all together.
Place evenly into bundt pan. You can also put into muffin tins to make individual loafs.
Bake 1 hour or until no longer pink inside.
Remove and allow to rest 5 minutes.

I put some catsup on top. Years ago I also put a couple of strips of bacon with the catsup. I try to make more than 1 at a time and freeze one. Makes such an easy dinner when it is already made and just needs to be baked. I also bake potatoes to serve with it.
