@Citrine1   Here you go:

 

1 whole egg*

1 Tsp Colman's dry mustard

1 Tsp salt

1/4 cup olive oil

 

Cover and blend on high speed to emulsify it.  As the blender is still whirling, stream in through the cap opening 1/2 cup of vegetable oil--or olive oil and then 3 Tbsp lemon juice until well combined.  Then stream in another 1/2 cup of oil.

 

*Most by-hand recipes use egg yolks only.  

 

My notes:  This mayonnaise is expensive to make because of the olive oil, but I buy it whenever it is on sale and it does not have to be the extra virgin type for this.  It is still good using mostly or all vegetable oil instead.

 

This recipe is essentially from the 1970s editions of Joy of Cooking, a cookbook I recommend highly.  There are so many ideas and variations for every category,  method, and ingredient used in cooking that it is my most referenced volume.

 

Because of the speed of the Vitamix this comes together quickly and makes just shy of two cups.

no preference-- buy whatever is on sale--i don't use mayo much so a big jar will last a long time. however--the best is certainly homemade--I've made some in a pinch---easy to do and very delicious

I can't have either one on a sandwich and much prefer Miracle Whip in chicken salad, potato salad, etc.

That is similar to me. I grew up using Miracle Whip salad dressing (nod to Mom!), then switched to Hellman’s Mayo (can’t recall why), then to Duke’s (no sugar). The brand I use now, mentioned in my previous post, is made with avocado oil.

Growing up we only had Hellman's. When I got married my husband only had Miracle Whip. 

 

So we only use Miracle Whip now. But with all this talk,  I bought a bottle of Kraft Mayonnaise just to see if I notice any difference.

@aroc3435   Thanks so much for taking the time to respond and for posting your recipe. I sincerely appreciate it.  I don't have any dry mustard on hand, but will add it to my food shopping list so that I may try this as soon as possible.  I'll get back to you with my review!
