Here you go, Southern Bee! I hope this helps and thanks for your family's cherished recipe!

CRANBERRY SALAD, by Southern Bee

Ingredients:

2 pkgs fresh or frozen cranberries, washed & drained

1 pkg (6 oz) Raspberry Jello

1 envelope KNOX gelatin

1 ( 8 oz.) crushed pineapple, drained

1 large orange, peeled and sectioned

1 bag large marshmallows, use 8 to 10

1 Cup chopped pecans

Directions:

Prepare raspberry Jello: Dissolve with 1 cup of hot water - stir well

Add 1 cup cold water - mix well.

Add KNOX gelatin - mix well & set aside.

With food grinder, alternately grind the cranberries and marshmallows

Stir in the pineapple and orange sections - mix well

* We usually add 1/4 to 1/2 cup sugar, but like a semi-sweet and tart taste.

Mix in chopped pecans

Pour into a beautiful cut glass serving dish and refrigerate,

Note: Mom would triple the recipe.. ENJOY!

Sabatini2: Thank you for taking the time to correct my mess! You are very helpful. I just noticed another error I made. Jello: I used the ( 6 oz) box. I will try to remember not to post recipes. I appreciate the great recipes, tips and suggestions I have received from this wonderful group.

No problem, Southern Bee! I fixed it, so all is well. Let me know if you want me to change anything else.

And please DON'T STOP posting recipes! I've never had a congealed salad, but yours actually makes me want to try it! I love the idea of all the fresh cranberries, and having the marshmallows ground along w/ them sounds good too, as I'm not a fan of 'whole' ones in things.

News flash: When you mix up jello and put it in the refrigerator, it congeals! Hence, the name "congealed salad". We like congealed salads at our house, and that is what we call them. No apologies. Congealed cranberry jello with pineapple, mandarin oranges, and nuts topped with a layer of softened cream cheese and Hellman's mayo is a holiday staple with turkey or ham. Really, really good!

I made these type of salads for years--holidays and special dinner parties/buffets, etc. We referred to them as "Jello" salads or "gelatin" salads. No longer make them as newer generation of guests do not like them.
