@Nomore

You make a good point. I probably should have asked for a cooking list and a baking list.

@okaywitheasypay

I have come scarily close to using cayenne instead of cinnamon. I've been super careful since then.

I did just that, thanks to Penzy's. Made French toast for the kids. Usually they would gobble 2 & even 3 slices. But nobody wanted seconds. I couldn't figure out why!

Finally, I tried one of the leftovers!

Okay, it wasn't Penzy's fault. But the bags of cayenne & cinnamon looked very similar.

Re: List your 10 essential spices to have on hand.

It would be difficult with just 10 - I like highly seasoned food!

Salt

Pepper mix (grinder)

Curry Powder

Garam Masala

Paprika

Turmeric

Basil

Sage

Seasoned Salt / Chinese 5-Spice / Italian mix (grinder)

Nutmeg/Cinnamon/Cardamom/Allspice

Plus - jars of curry paste, garlic paste, etc., etc. in the fridge.

I once put cinnamon on broiled scallops Instead of paprika in error...all 10 pounds of them.  I cooked them for my brother who was having a party.  I was so upset and embarassed and thought they were ruined.

His guests raved about them. They were actually very good. Many cooking and baking spices are interchangeable.
