I just made refrigerator pickles and have 2 jars of pickle juice left over. Thinking about adding some more sliced cucumbers and onions to the juice.
Those pickles were so good on hot dog or hamburger!!!! May never buy store pickles again!!!

I like to use leftover pickle juice when I make coleslaw. It gives the slaw a much better flavor that using regular vinegar.

Barbara, you have the right idea. I cut up cukes and onions in leftover bread & butter pickle juice (store-bought). After only a day in the fridge, they were so crunchy and delicious, much better than the ones that were originally in the jar, IMO! I've been doing that with this same jar of pickle juice for several weeks now. I've decided that the only way I will buy pickles again is when this is used up and I have to buy another jar! I may also try some other kind, like dill. BTW, you may have inspired me to try and make the refrigerator pickles....although this way is SO easy...![]()

LOL, I don't like pickles so I never have that problem.

I'm not kidding, but some people drink the juice (in small quantities) to relieve leg cramps.

I buy pickled beets in a large jar and when we have eaten all the beets I add a can of sliced beets from the grocery store to the juice that is left. After a few days they are almost as good as the originals. I toss the juice after the second use.

I drink it when I have acid reflux/heartburn. It works like a charm.
