I have used Jiffy for my dressing during the holidays but normally use something not so sweet. To me, Jiffy is two sweet, but thanks for the suggestions to make it taste better. I will keep them in mind when I am using Jiffy again!

My favorite recipe using Jiffy mix is Cheesy Broccoli Cornbread:

 

Cheesy Broccoli Cornbread

 

Ingredients

  • 1 cup cottage cheese
  • 4 large eggs
  • 3/4 cup butter, melted  (I use ½ cup)
  • 1 medium onion, finely chopped
  • pinch of cayenne pepper
  • 2 (8.5-ounce) packages Jiffy corn bread mix
  • 1 (12-ounce) package frozen chopped broccoli, thawed 
  • 1 1/2 cups shredded sharp cheddar

Instructions

  1. Preheat oven to 375 degrees and grease a 9X13-inch baking pan.
  2. Whisk cottage cheese and eggs in a large bowl until blended well.
  3. Whisk in butter.
  4. Stir in onion and cayenne.
  5. Stir in cornbread mix, broccoli, and 1 cup cheddar.
  6. Pour batter into prepared pan. Sprinkle remaining cheese on top.
  7. Bake 35 to 40 minutes.

Batter will be thick.

It's not exactly cornbread, but I make a moist keto/low carb alternative from scratch that we enjoy.  There's no corn in it, just sweet corn extract for flavor.

@Icegoddess I hate cornbread, corn muffins, grits, never had a corn dog and never will, English Muffins need to be scrubbed clean of the cornmeal before I toast them.

I like the recipe on the box of Quaker corn meal.  I play with it a little depending on what I'm making.
