To make the best Jiffy cornbread muffins...

 

Take 1 heaping Tbsp of mix out of the box and add back1 heaping Tbsp of self rising flour

 

Not crumbly and easy to eat!  Butter while hot!

My sister uses Jiffy. She uses buttermilk instead of milk plus uses almost 2/3 cup instead of 1/3 cup. It makes it so moist. She adds it to her dressing during the Holiday's. 

I was crumbling it up for her one year. I could not stop eating it. LOL!!!

this is my personal favorite jiffy box recipe for very moist cornbread.... i prefer using butter for the oil and half n half for the milk. decadent

 

 

MOIST JIFFY CORNBREAD (back to my southern roots)

 

Preheat oven to 400 degrees

 

Ingredients
  • 2 - 8 ½ ounces boxes
    Jiffy Corn Muffin Mix
  • 2
    Eggs
  • ⅔ cup
    Milk
  • 1 cup
    Sour Cream
  • ½ cup
    Vegetable Oil
  • 2 tablespoons
    Sugar (optional)
Directions
1. Add the Jiffy Corn Muffin Mixes to a large bowl.
2. Add the eggs, milk, sour cream, vegetable oil, and sugar.
3. Mix all of the ingredients together.
4. Pour into a greased 9" x 9" casserole dish.
5. Bake for 25-30 minutes, or until cake tester comes out clean.

I love Jiffy cornbread too, and use 2 boxes, cook in a cast iron skillet, then top with honey-butter.

 

@sunshine45, your recipe is interesting, but I can imagine adding that much sour cream and oil. Is the texture gummy at all?

That sounds so good but there is just me and that is a lot of cornbread!!!!

this can be easily cut in half since it uses two boxes of mix.

this way you have a thicker cornbread.

For muffins, I like the Jiffy Vegetarian corn muffin ones just as they are.  For cornbread, my favorite is Shawnee white. REAL cornbread. 

 

If you are going to mix stuff in, just make a real recipe.  For quick and tasty, go Jiffy!
