I know I'll have a ham, but most importantly, I know I'll make a New York Style Cheesecake!Woman Very Happy  I haven't started thinking about the sides yet.  Since it's just my husband, our two young children, and me, we keep it simple.  We want to have a relaxing day, not crazy stressful.  I may make a pasta salad, have some chips, Sister Schubert's yeast rolls (for ham sandwiches), and another side or two.  Simple, easy, relaxing day sounds good to me!

No--I don't cook special holiday dinners anymore. Too much work and cost for me. We usually get invited out to eat and I bring a side dish or 2. And if we stay home, it will be dinner as usual. I may opt for a nicer brunch menu tho.

The last few years I have been doing an Easter Brunch instead of dinner.   That gives my kids a chance to be with their extended families later in the day.  Quite often we are included which is a treat for me.

 

Thinking of Easter dinner though, I grew up always having ham and my mother made a raisin sauce.   I have made that as well if cooking Easter dinner.  Anyone else do a raisin sauce or other sauce with ham?

Yes! We all love raisins, especially DH.  I made a raisin sauce every year for a long time and served it in a gravy boat to put a small amount on the meat.
