Yes; today I bought 8 cans of small, whole beets to make pickled eggs and beets for Easter.   I am leaning towards a turkey breast or boneless ribeye roast; both are in the freezer, and my family will decide what they are in the mood to eat.

I'll be right over!  When do we eat?

I made my pickled beets and I only make 2 cans at a time but I added 1 TBSP of balsamic vinegar to them.  OMG!

I have to make myself stop eating them.  They are sooooo good!  I also put a dash of cinnamon, just a tad.

There are just two of us. A grilled cheese sandwich or going out for lunch suits me.

Why is it, when I have a 50/50 guess at something, I'm always 100% wrong?

WE LOVE EASTER!

Decorations, baskets for each other with little gifts and one See's candy egg each.

I ordered the Easter house and Easter trees from Valerie for a new look on the mantel.  I use my set of Lenox butterfly dishes for a Spring look at table.

Ham for dinner, I vary the sides depending on mood and new recipes I see to try.

How about Passover?  Are you cooking for Seder?

@Noel7  No. For one thing I don't observe Passover, unless I'm invited to someone's Seder and I go as a social occasion as I did last year (still not observing Passover), and for another thing, I don't cook!

We used to share Passover with friends for years and years, until they moved across country.  I loved it and it taught my daughter well Smiley Happy

I think it will be just DH & I, got 2 big ribeyesvacuumed sealed in the freezer. I will do the potato salad & deviled eggs plus a salad. I don't even think I could eat half a steak so will do cheese steak sandwich the following day. Cook once eat twice. Got to remember to check the propane tank think we are low.

Re: Is Anyone Thinking Of Easter Dinner Yet?

I'm ready for spring so maybe I'll go with something lighter like salmon, salad and baby veggies with something Lemony for desert.

However if it's going to still be wintery weather,  I may go with spring lamb.
