I love them.

I have a cousin who makes them with a slice of green olive w/pimento on top for garnish. To me they look like eyeballs.

I prefer to garnish mine with chopped chives.

Yum! great ideas here. I mix up the yolks with mayo a little yellow mustard and horseradish -- just enough to give them a little zip.
