I see nothing wrong with a simple meal, and my hubby thinks the same way, thankfully, so I don't spend any time checking the internet for meal plans. I buy a lot of foods that just need to be heated: Sam's brand of fullly cooked cheeseburgers and chicken strips, frozen tortellini with a jar of Alfredo pasta sauce, spaghetti with a jar of marinara. I keep a supply of frozen and canned veggies on hand, along with potatoes for baking, or a box of garlic bread, and there's always just sandwiches and soup for a meal.
My family has always eaten what I prepare, and most times what I prepare is nothing fancy. Once in awhile I'll pull out a favorite recipe and make something from scratch, but that is the exception. Cooking a big meal, or several meals every day is great for those who enjoy it. I'm not one of them and my husband would never expect me to do that. My meal planning is simple - it's whatever we're hungry for that particular day!

Cooking for 1 person, is not enjoyable,frozen meals have so much salt in them.

I'm like @JeanLouiseFinch and plan all my meals out in advance, sometimes two weeks in advance. It's just my husband and I right now, so I will ask him what he wants and we go thru the dishes he likes. He is easy and doesn't mind that the same 15 or so items get rotated around. And he will eat some 2nd day leftovers .. like spaghetti, meatloaf, chili, black bean soup, roasted chicken, stew. We also don't always eat the same items because he can eat things I can't. Meal planning makes grocery shopping so much easier.
When my boys were home it wasn't much different. They ate what I put on the table or they had cereal for dinner. I did not ask my boys what they wanted for dinner, but I did not make them eat stuff I knew they didn't like. If my husband and I wanted salmon we would have that and I might throw chicken strips or fish sticks into the oven for the boys. I wasn't going to waste fresh salmon on two boys who, at the time, declared their hatred of salmon.
I guess I'm lucky that no one is/was too picky about what they eat.

@goldensrbest If you have access to facebook, try watching Jacque Pepin's little short videos. My husband laughs because that is very much the way I cook. I cook what is around.
The videos are short and have a couple of portions usually, but very simple things and lots of ideas.
