I Am Really Slacking On Supper Tonight.

I made some tuna salad this afternoon.  So it's sandwiches and chips.  It is too darn hot to cook.  There is a breeze but it's just really hot air blowing around.

I told DD last night I had the makings for tuna noodle casserole.  The response was, "do you really want to turn the oven on?  Just make tuna salad and we can have a sandwich.  I'm good with that if you are."

We did steaks and fries in the Ninja Sunday and I did a pork roast in the crockpot yesterday so I did do a proper meal in the last couple days.

Are you cooking alot in this beastly weather?

My husband grilled out on Sunday so we are having brats and German potato salad. I love when there are grilled burgers and hot dogs in the fridge. Meals are a breeze in summer. Oh, I make a lot of tuna salad too.

Nope, yesterday it was chicken salad sandwiches, and today I mixed the left over salad with pasta. It made a nice pasta salad and we are having it with fresh tomatoes and cukes. Summer meals can be casual IMO.

Well, I don't cook a lot but the weather doesn't affect my cooking.  Turning on our oven doesn't heat the house up.  We have central a/c but even on days when it's not on, I've never noticed the oven making things hotter in here.

Why is it, when I have a 50/50 guess at something, I'm always 100% wrong?

I bought tuna steaks so seared tuna which is quick, fresh corn and sliced tomatoes with asiago cheese sprinkled on them. We have a farm stand very close and this time of year everything there is amazing

Re: I Am Really Slacking On Supper Tonight.

@CrazyKittyLvr2 It is just too hot to cook. I have been living on garden salads, tomato sandwiches, egg salad sandwiches, tuna salad, Greek tortellini pasta salad, cottage cheese and yogurt for the past 2 weeks. If I have to boil water (for the pasta and the hard boiled eggs), I do it early in the morning. I also got a store rotisserie chicken and made chicken salad.

I am very much looking forward to a break in the heat/humidity so I can cook some real meals.

@I am still oxox Eating out is such a nice option! (I have asthma so I have not been going out to eat due to covid) I am sorry to read about your power issue. I hope it is resolved now.

Re: I Am Really Slacking On Supper Tonight.

We grill in all different kinds of weather.  I did roast whole okra last night.

With all of the tomatoes coming in, I bet there will be a lot of BLT's and cantaloupe.  I would want a salad too.

Re: I Am Really Slacking On Supper Tonight.

I don't cook a lot, especially in the summer. If I make 3 meals a week, I'm doing good! Summer is good for fresh veggies, pasta salads, cold or hot sandwiches, etc, and I'm fortunate that DH is just fine with that. On days that I don't make anything, we each find either leftovers or something else to eat. My appetite is always less in the summer, so I don't want big meals.
