Re: How will you be cooking your corned beef?

@violann, you said Shop-Rite! How I miss those stores. We lived in NJ until we moved to FL in 2009, and there's nothing like SR down here (there are supermarkets, sure, but you can't beat SR's prices or the variety of store-brand products -- or the quality and cariety of  the items they carry in their meat and fish departments). I worked for one of our local stores for 5 years in high school and college, and  my husband was a department manager for them for 38 years (yeah, that's where we met).

I used to boil my corned beef (as infrequently as I made it -- my husband isn't a fan, really) and I did it in the oven once. This year, I did it in the pressure cooker, and it was the best I've ever made.

@kathya1119 We have two wonderful new ShopRite stores. One of them provides childcare and exercise classes for shoppers!

The one nearer to us is also very large, and even DH loves to shop there. The variety of items is fabulous, and with such assets as a very good bakery, snack bar, fresh ground nut butters, lovely plant and flower department, it's fun to go even if you don't NEED to shop!

Re: How will you be cooking your corned beef?

@violann, now you're making me feel worse! The store my husband worked in before he retired had a small food court. I'd make him something to take for lunch, but he'd get something hot to have with it. They had a great bakery, too.
