@sabatini Sure!  We just freeze the cooked leftovers with some juice and have them later.  We eat them with beans and cornbread, or put them in soups.  They are so good for you!  And we squeeze the juice out and use them in lasagna layers too.

@Sooner, you and I are the same when it comes to leftovers.

Concerning leftover greens, I'm in agreement, but something you said about them piqued my interest: "freeze for later".

What is this madness/magic?! Please tell!

LOL, that makes perfect sense! In my head, I'd read fresh leftover greens.

Sigh.

Re: How Often Do You Have Leftover's Night?

[ Edited ]

Had to laugh when I saw this thread. Realized tonight is a big leftover night in our house.

This  bizarre dinner combination will actually to be on our table tonight..........

--Cold shrimp with cocktail sauce purchased at Costco.  Sliced Campari tomatoes with a drizzle of dressing.

--Squash/carrot/onion casserole prepared and served  last night, but have lots left over for tonight (one of my favorite dishes).

--Three beef Hebrew National frankfurters and half a small can of Hormel no-bean chili from last night.  (One or two chili-dogs-on-a bun  can be served if DH wishes), and any remaining can be sliced and  mixed into oven-baked  baked beans dressed up with  chopped onions and peppers plus a little mustard and ketchup.

Believe it or not, this crazy food combo sounds good even to me right now!

@ECBG

If it's enough for another meal, I freeze it and pull it out on a night I don't feel like cooking.  If it's less than enough for a meal, it goes into the fridge where DH eats it for lunch (or breakfast sometimes (!) Occasionally I might eat some for lunch.  I rarely repeat the same meal two days in a row because neither one of us is happy with that.

Re: How Often Do You Have Leftover's Night?

We don't like to waste food, so if we have something like stew, chili, spaghetti, we will eat it 2 or 3 times and if we still have any left, we will freeze the rest.  Food is just too expensive to throw away.

Re: How Often Do You Have Leftover's Night?

I always cook enough for a few days ( live alone, so only cook what I like....)

BUT.....if there ARE leftovers, they get eaten or frozen for future meals...'

.

My garbage pickup is Wednesday, so Tuesday is "use up" day at  my house. Anything that's open with a little left in it, or veggies that are not perfect, or little bits of anything still useful..it gets used up or eaten that day.

Wednesday is the day I make canned tuna or salmon salad in the morning, so the large can go out in the trash pickup that day!! ( I HATE smelly garbage!!)

If I have bottles of ranch, bleu cheese, ketchup or BBQ sauce that is near the end of the bottle, I add water and rinse it into whatever stew or meat I am cooking. It's amazing how good it make the juices/gravy taste, and no waste!

Not a food leftover, but a toothpase leftover!!! Those pretty tubes of expensive ProNamel for instance that still have several day of product trapped inside them when they pretend to be empty. I cut off the crimped end, use a tiny piece of Saran and a rubber band to seal it after, and use it ALL up. I'm not sure if that toothpaste is a gimmick or not, but I"m hedging my bets!!!

Beekmans Soap Paste they sold a few months back, same thing. I like the product but it's very hard to dispense from that toothpaste style tube, and a very lot of it stays in the tube..again..cut off the crimp, use a rubber band and a tiny piece of Saran wrap to seal, and take a teaspoon in the shower to scoop it clean and out of that tube.

I use EVERYTHING I buy. If I get something new and don't like it, tough. I eat it. I don't do that often but nothing gets wasted here. And I feed feral cats so they may get a tiny bit of something....

I had sausage/peppers and onions this past hot weekend, and have about a cup of the mixed pepper and onion left, with a little juice from the sausage. Today, I will make that with two or three jumbo eggs in an omelet for my noon ( big) meal.

Waste not, want not!

Who knew it would be a thing in 2022???

Re: How Often Do You Have Leftover's Night?

We usually have leftovers 3 times a week. I haven’t learned yet to cook smaller portions. Empty nesters now. Best leftovers I like to eat is cold chili spooned on a saltine cracker. Yeah, I know weird. Lol

We eat leftovers until they're done. Whether it's only a day or a week.I never waste food.
