I finished the last of the turkey tonight!
Turkey is almost my favorite meal, I only make it once a year, and I love that type of turkey sandwich (hate deli turkey). Also, it's nice to have leftovers while you're decorating. Only, this time I couldn't get him going!
DH started grilling himself pork chops as of last night! LOL!

I served almost 40 people and made two 24 lb turkeys. They were beautiful birds with a ton of breast meat on them.
i gave left overs to anyone who wanted them. Then I packaged up the big nice slices for sandwitches for my DH. There was not a lot left.
i made turkey broth with the bones and small pieces of meat and turned that Into turkey and dumplings.
i made potato soup with the left over mashed potatoes. My DH will not eat left overs, so I have to turn them into something else.
By Saturday, there were no traces of leftovers. I did freeze some of the new make over foods.

Was just the 2 of us this year, quiet Thanksgiving in Montauk....did a 2 1/4 lb boneless turkey breast. Had leftovers Saturday for dinner, and a sandwich for lunch yesterday, and all the turkey is gone.

I do ham, not turkey.
I have a beautiful ham bone that will go in the slow cooker for ham & bean soup!
So I guess that can be considered a left-over.
Everything else is about gone.

Please be aware that fresh turkey is safe to eat for only 3-4 days after it is roasted if refrigerated.
if you want to keep it longer, it must be frozen.

Still got 'em -- in the form of a Thanksgiving dump casserole that is being reheated a few times. I'll eventually freeze what we don't finish.
