Yes, I do make milk gravy from scratch most of the time.  However, because of my allergy to milk, I keep those packages of gravy mix on hand since my system can usually handle that better than milk gravy.

I don't think I ever had cube steak, but your dish looks good to me @ECBG .  I love fried peppers and onions with just about anything.

Typically, cube steak comes from cuts of sirloin and the round of beef, which come from the 2 hindquarter areas of the cow.  

 

They are usually scrap cuts of beef left after specialty cuts are made, and are run thru the tenderizer machine to give the meat that aerated look, which makes it cook quickly.  

 

Some of the pieces of cube steak I've purchased recently have been much larger and thicker than usual, so it's hard to tell where that beef came from on the cow before it went thru the tenderizer! Creative meat cutting for sure.

@RedTop   I use lactose free milk and it actually tastes better than milk.  Never tried lactaid but Kroger's lacose free is very good.

Some of these recipies sound pretty good . But , I have to say I've never had cubed steak . My Grandmother  considered it " chewed Meat " ; so my Mother  never made it . I'll have to give it a try ! You never know , I may love it ! Lol !

@Sapphiregal   No so.  I would not eat tough meat and DH makes cube steak by baking it not frying or steaming and it is delicious and I don't even really like meat that much but I do like his cube steak.  And we do not use meat tenderizer in this house so that isn't it.

I have been shocked by close friends, raised very rural like me, who have in conversation mentioned various cuts of meat they have never eaten or cooked.  If mom didn't cook it, they don't cook it, but more importantly they don't know how to cook it.   

When I recall most of the conversations we had at work over lunch, someone was usually taking notes on how to cook something.  One coworker had never cooked a chuck roast, one had never cooked a London broil, and none had never cooked a whole beef tenderloin.

I have a neighbor who doesn't like beef!  Only buys ground beef for burgers cause all the other "stuff" hides the beef!

 

My son gets lots of venison, which tends to be tough, so he bought a tenderizing machine.  Works great. 

 

We got a 'not so tender' prime rib and ran the cooked pieces through the machine!  Solved the problem!
