Overcooked is in the eye of the beholder. I like my vegetables on the soft side. Whenever I pick up take out Chinese food, the cook yells at me, but I'm the customer.

This is why I prefer buying a rotisserie chicken instead. Don't have to worry about a tough piece of beef. ![]()

I'm sorry, but, I have to agree with those who have said that your dish does not look good. Cube steak is just tough, I don't care how you cook it or what you cover it with.

DH makes cube steak that is delicious. He is picky about where to buy this cut of meat and goes to the market that only sells meat and what he gets is not tough or gristly.
Browns it in flour then bakes it. Uses canned cream of mushroom soup and a package of Liptons beefy onion soup to make the gravy he bakes it in. It comes out tender and delicious. I am not really much of a beef eater but I do love his cube steak and mashed potatoes.

DH isn't crazy about them, but every now and then I love a good cube steak seasoned and fried in butter, and topped with lots of grilled onions. But I'd happily eat it with your peppers and mushrooms too @ECBG .

Wouldn't touch these remarks with a 10 foot pole, however I did print out your DH's way of cooking it. Haven't fixed this in years, but I believe this is how I used to make it.
