hi ladies, any suggestions for a luncheon I'm planning? Serving a chicken salad that does have fruit in it, and small croissants for either making a sandwich or just on the side. What else can I put with this to round it out. didn't think another salad was a food choice. TIA.

something crunchy like chips or pretzels. Or nuts. Depends upon how healthy you want to go. I am , personally, a fan of Special K crackers - very low cal - no sugar no fat, and very tasty.

What about a soup, like Gazpacho or a cream based soup like cream of broccoli?

And a veggie tray with additional items like olives or pickled veggies.

A spinach salad and then toppings set out so everyone can add what they want - strawberries, goat cheese, sliced almonds...

Maybe broccoli with almonds on the side? Something green to contrast with the white of the chicken?

I'd go with a bowl of beautiful salad greens and a homemade dressing on the side that would go with the chicken salad. Buttermilk for example.

I love chicken salad with pita chips.

Serve on a romaine leaf for the green.

A green salad would be a great choice! Sure they're both called 'salad' but are completely different! You already have the croissants--chips or other snack type foods don't appeal to me, with the lovely luncheon combo you're already serving. Here's a delicious one I've used many times-- (I don't think the fruit would interfere with the fruit in the chicken salad)

Orange Vegetable Salad

1 package fresh spinach

green pepper, chopped

1 cauliflower, broken into flowerets

2 cans mandarin oranges, drained

Dressing

2 Tb. white (if possible) wine vinegar

2 Tb. lemon juice

1/2 c. salad oil

1 tsp. salt

1/4 tsp. pepper

1 tsp. sugar

1/2 tsp. dry mustard

1 clove garlic, chopped

Mix dressing ingredients in food processor or blender. Pour over salad; toss.

I would think about the idea of cheese, several different kinds, and maybe a baked Brie......also a pickle tray with different pickles/olives/pickled beets, to add a fruity/salty combo with your fruited chicken salad......and cheese goes with both........
