OR you could make this famous Hearts of Palm Salad from Cedar Key, Florida...
It is definitely worth the effort.
HEARTS OF PALM SALAD
2 (14-oz) cans Hearts of Palm, drained & thinly sliced
2 cups chopped lettuce greens
1 medium pineapple, cubed
2 bananas, sliced
2 to 3 tablespoons chopped dates
Candied ginger for garnish
Ice Cream Dressing (recipe below)
In a salad bowl, combine the sliced hearts of palm and lettuce greens; gently toss with Ice Cream Dressing. Place salad onto individual plates. Sprinkle pineapple, bananas, and dates over the top of the salad; garnish with candied ginger.
Makes 4 servings.
ICE CREAM DRESSING
1/2 cup softened vanilla ice cream
1/2 cup mayonnaise
1 tablespoon creamy peanut butter
1 drop of green food coloring (optional)
In a blender or food processor, combine ice cream, mayonnaise, peanut butter, and food coloring; whirl 1 minute or until well blended. Store, covered, in the refrigerator. Serve at room temperature.
Makes 1 cup.

Hearts of palm are way too good! I just cut them up and use as has been said previously, the way you'd do artichokes. I also marinate them in vinaigrette.
The best soup I had ever in my life was heart of palm soup in Sao Paolo (my cousins are Brazilian and I was visiting. ) It was sort of a cream of celery soup except it used heart of palm. The base is chicken broth thicken with butter and flour, then the hearts as you'd cook celery (I assume theirs were fresh) and then make up the volume with cream.
It was unbelievable.

When I want something a little different I roll them up in egg roll wrappers, deep fry them, and dip in whatever sauce (hoisin, sweet and sour) or salad dressing comes to mind.

You can also cut into 1" pieces, wrap with a little prosciutto and stick on a toothpick as an appetizer.

I discovered hearts of palm about a month ago, in the pickled things section. Although expensive I bought a jar out of curiosity. They are addictive right out of the jar!
