I treat hearts of palm like I would use artichokes. They are really tasty and can be a great addition to lots of things.

Hearts of Palm are really good in salads. I slice them about a half inch thick and add them to my salads.

Love them in my salad also. Slice them into bite-size pieces and they will be delicious.

I bought that same 2 jar set and have yet to open them but thanks for reminding me that I still have them. Like the others, my plan was to use them in a salad.

Yes, they are great in salads, and nice with a mustard vinaigrette and grape tomatoes with other salad ingredients.

You can cut them up in salads - I have one I make a lot:
1 can hearts of palm cut in 1/2" slices
1 large jar marinated artichoke hearts
1 can pitted ripe olives
1 pkg. tortellini (fresh, dry or frozen) cooked according to package directions.
Just combine everything - the marinade from the artichoke hearts constitutes the dressing - if it seems a little dry, add some olive oil. You can omit the olives and/or add grape tomatoes, broccoli, whatever make you happy.
You can also cut into 1" pieces, wrap with a little prosciutto and stick on a toothpick as an appetizer.
