Here ya go, @Q-Checker .  The recipe says to add cornstarch to thicken.  I prefer xanthan gum.  If you decide to try the xanthan gum, use small amounts like a teaspoon and cast it over the top rather than dumping it in one place.  Stir and see if the sauce is to your liking.

I only cook green beans in my pressure cooker--same with fresh corn. Takes 2 minutes and the beans are absolutely perfect as is the corn. I like to do a quick pickle on cukes and then I roast peppers. I like snap pea pods fresh or lightly steamed with some garlic and sesame oil. Fresh beets pickled are heavenly too.

@wagirl We watched a Jacques Pepin video where he steamed beans on the stovetop for 7 minutes.  We started eating so many we bought a medium sized  (2 to 3 qt.) steamer pot with a rounded bottom, long handle steamer insert, and  a glass lid on Amazon for around $35 to $50.  Can't remember the brand or price. Thought that might be helpfur for others reading.

 

It works great and we use it for a lot of things.  We discovered that while we were washing and cutting the ends off the beans, the water boiled!  Woman LOL  It's nice to have the glass lid so you can see how done they are.

Bags of California Blend from Aldi's are what I like. $1.15 for a steamer bag that has a lot of carrots, broccoli and cauliflower.

@Tinkrbl44   Thanks for your idea about Canned Stewed Tomatoes eaten cold!  Delicious!  

 

I used the Original with peppers and onions.  Added a dash of soda (just for me) and now I will have them around all the time.  Quick easy and sooo good!

@Kachina624  You should try these. They have just a little bit of heat. They are so addictive that they are hard to find around here. Make sure to look for the bread and butter pickles, They also make jalapeno slices and the jar looks the same. The pickles are wonderful.(Sweet Heat)

You can pickle almost any vegetable!  

 

Some I would cook first, others use raw!  You know which ones you eat raw!

 

Pickling brine is only 3-5 ingredients.  Bring to boil...pour over cut up veggies!  Eat warm or chilled!

 

Not pickled for long term storage!
