I roast a pan of veggies and eat them like chips!  I use broccoli, cauliflower & carrots. 

 

I pickle beets, carrots and green & wax beans!

 

Always tasty.  I use EVOO, Himalayan salt, black pepper & garlic (together) in a plastic bag.  Use EVOO first to coat then add other spices.  Yours may vary!

 

I use canned veggies to pickle.  I buy Ball's Pickling spice instead of doing my own.  Add to picklin liquid.  Directions on the net!

 

I do a lot a Ala Carte eating these days!

Thanks for wonderful suggestions!  I have on my "to do" list to learn to pickle red onions.  I've been buying them and would like to try making my own.

Pinterest has lots of recipes.  Hope you find one like the ones you buy.  Homemade are much better!  Well worth the time to make them.

I like a to boil eggs and put them in my pickled beet juice and put them on a salad, I use the pickled juice as my salad dressing so good with  the fresh garden tomatoes and cucumbers.

Actually, I also like cold stewed tomatoes, and sometimes have a can of those in the fridge.   First time I tried them cold, I was surprised how good they are that way.  Another "instant" vegetable.


@Tinkrbl44 YES I love stewed tomatoes out of the can and cold too!!!  I love them with cottage cheese or with cooked pasta!

We haven't had potatoes in any form for six years.  My go to sides are tossed salad, fresh or frozen green beans, fresh or frozen broccoli, fresh Brussels sprouts, or fresh asparagus.  I make them a a few different ways but steamed or roasted are the most common.  Usually I season with Kinders "The Blend". It's just salt, pepper , and garlic.  I add butter to the steamed veggies when I serve them.  Sometimes I'll do a little extra like wrapping asparagus with bacon before roasting.  I also have a great Brussels sprouts casserole for an occasional splurge.

@JeanLouiseFinch Pretty muchh try to eat the same as you do.  One exception is that I decided to start buying sweet potatoes this year.  We have them cooked whole in the microwave.

@JeanLouiseFinch We quit Kinders except for the low salt kind.  Potatoes have never been a big favorite with us--maybe a baked one sometimes, although we like sweet potatos.  We rarely use butter or bacon because we are trying to go low fat, occasional olive oil
