Fudge For One

1/3 cup sugar
1 heaping tablespoon cocoa
1 tablespoon and 2 teaspoons milk
1 scant tablespoon butter or margarine
1/2 teaspoon vanilla
Mix sugar, cocoa and milk in 1 quart glass measuring cup. Microwave on high 1 minute.
Stir down sides of cup and microwave 40 seconds more. Add butter and vanilla.
Beat until thick, put in on a plate and let it set up. Cut into squares and enjoy!!

I made this last year and didn't have 3 full cups of choc chips. I thought I could make up the balance with nuts. Apparently it needs the chocolate, in the full amount, or it doesn't set. It was wonderful fudge sauce and no one complained about it when served over ice cream, but I was trying to make fudge solid enough for squares.

Normally I mess around with recipes all the time, a bit more of this, a bit less of that. I learned that the fudge recipe is not to be messed with.

That's what happened to my spoon fudge, just pitched it. Told hubby, I'll do it for him next week.

The secret to no fail fudge is to add a heaping teaspoon of cornstarch to the sugar mixture, which will insure firmness. I learned this trick more than 20 years ago, and have never had a problem since. I shared this with a friend from work who swore she couldn't make fudge that ever turned out right. Now that she's tried my cornstarch secret, she is helping me spread the word to help stop "spoon fudge". Best wishes to you.

I have always used this Fantasy Fudge Original Recipe to make fudge with. Love it dark or milk chocolate with walnuts or peanut butter without nuts. To make the peanut butter just use peanut butter chips instead of chocolate. Hope my sis will make some for Christmas as we will be on the road to her house so I probably will not be making any this Christmas.

I would like to try the Eagle Brand recipe Sharke posted above sounds super easy. Every year I say I'm going to try another recipe but afraid it will be a flop so I have always stuck to the above recipe which always turns out for me.

I made a similar recipe last night and it worked very well. I realized I had no vanilla extract, so I brewed a rich cup of peppermint coffee and used a teaspoon full of that instead. Seemed to come out just fine, but you can't really taste the peppermint.

One thing I failed to do was line the pan with foil or butter the pan, so the fudge is really in there. If I do this again, I will line the pan with foil, spray it with cooking spray, then let it set. Once set, I'll turn it out upside down, peel back the foil to cut the fudge into pieces, then store in a plastic container.

I have made fantasy fudge for years, my Mom made it before me. I now get requests for it. I've already made 2 batches for Christmas and put them in the freezer.
