Growing up I knew old guys who could smoke beef ribs that were wonderful.  I've never tried them.

 

But we do smoke brisket and I guess that's my real favorite when really done right and juicy and smokey and slices beautifully.  It just takes foreve and a day.

@Sooner  I just bought some St, Louis style ribs today and will be grilling them tomorrow, along with some grilled asparagus.  So looking forward to it.

I make beef ribs by following a recipe I saw many years ago on "Cook's Country".  First I apply a dry rub.  Then I lay them on a rack sitting in a rimmed baking sheet.  Then I cover the bottom of the sheet with water.  Lastly I tightly cover the sheet with heavy-duty aluminum foil.  Steam them in a 300 degree oven for 2 hours.  Remove ribs from sheet and finish off in a smoker for about 1 1/2 hours.

@deepwaterdotter THANKS for that recipe!  I will have to try that.  IF I can find beef ribs! Now you have me thinking about it!  Yikes!  Woman Embarassed

Oh I love smoked ribs.  No sauce for me, just the wonderful smoked ribs, all on their own.

 

I never make them but enjoy them every time we go to St Louis.  Pappy's Smokehouse!  Really great smoked meats there!
