I'm lazy today and and wanted something sweet. Awhile back I purchased a bag of Martha White strawberry muffin mix, and talk about easy, I put the mix and a half cup of milk in my 4 cup measuring cup and gave it a quick mix. It made 6 med. size muffins and they were pretty good for the amount of effort I put into making them. I think next time I'll make the pumpkin ones.

You didn't need egg?

@QVCkitty1    I love those muffins!  I haven't made them in ages either.  I always liked the strawberry and blueberry.  They're so easy to make it's hard to believe they turn out so good!  Thanks for reminding me about them.  I'll pick some up next time I'm at the store.

 

I almost forgot, you can make them really big if you have the large muffin tins.  They turn out beautifully!

@The Jiffy Blueberry, Apple Cinnamon, Raspberry or Banana Muffin mixed are great too, but we mostly make them into pancakes. My grandsons love them!

Oh my, we've used that mix in my family for as long as I can remember and it never fails. Our preference is mini muffins.

I use the Martha White mixes to make muffins for trucker daughter every trip.

The Betty Crocker corn muffin mix is my favorite. You need an egg, milk, and two tablespoons of melted butter, but it makes six delicious muffins. My local stores stopped carrying it, so I order it online through Amazon and get a box with nine pouches for $12+.

 

Contrary to the instructions not to overmix, I use my little electric whisk thing to whip it into a frenzy and they come out super tender, light, and fluffy.

You reminded me I have few pouches of the Betty Crocker in the pantry.  I make it in a small skillet and cut into wedges.  Much more natural tasting than Jiffy.  

 

Will whip it up later.  Thanks for the reminder.
