I think that long ago the whole world was different, and that probably included the sorts of bacteria we encountered.
On the other hand, just because we ourselves never were attacked by our food doesn't mean the statistics are wrong. Go back and check out the average age to which people lived. Way lower than now. Some of the difference was undoubtedly due to greater infant mortality, lots of the difference because of the lack of antibiotics, but it's quite likely also that many more people died of food-borne illnesses than do today.

I thought the acid in pasta sauce would keep it fresh.
I wouldn't keep a cream, egg sauce.
I can't eat a pkg of lunchmeat in 3 days! Not my choice to freeze.

@Zhills lol If I bought a whole package, the product would be slimy before I'd use all of it. That's why if I occasionally want deli meat or cheese, I wait in line and buy no more than I will use in 2 or 3 days. I just say how many slices I want, not the weight!

I have always kept leftovers a week and never had a problem. I cook a huge meal on Sunday, and we eat the leftovers all week.

You are correct but mine doesn't say, "food is bad in 3 days," maybe I am slow!

Most bacteria is killed when you reheat to boiling.
I have never had a problem and I keep leftovers for 5 days.
When I buy chicken salad at Fresh Market, I don't throw that away in 3 days either.

4 days max. i made eggplant parm sunday and finished it off today. chili, meatloaf, pasta sauce. after 4 days jmo, a bit sketchy...

I certainly don't discard deli meat after a week. Hot dogs last a LONG time.
I generally keep cooked food a week or less if it doesn't get eaten.
I think I saw something the other day that said opened mayo lasts a month. I just laughed at that one.
