Use them. I keep eggs for at least a month after the expiration date.

In many cases, expiration dates are used to get people to buy a product again.

I noticed when I first moved out of my parents house (1972) that eggs didn't have an expiration date. I often had some for 6+ months in my fridge. Of course, chickens weren't fed hormones and all the other cr+p then.

Sigh 😔   I think those cardboard cartons are dirty, so I transfer my eggs to a plastic tray that I can wash.

Soooo I have absolutely no idea if mine are expired!

If the eggs are from a source you are familiar with and can trust, definitely use them! I've been buying the same brand of eggs for years, and my "rule" is that if I haven't used all the eggs by one full month after the expiration date, I'll get rid of them. No issues whatsoever with this approach so far.

And if you ever crack open an egg and it's bad, there is no chance you won't know; the smell (and often the appearance) will be very obvious.

I never look at the expiration date.  If I've had them awhile, I'll do the water test to see if they float.  Older eggs work better for Deviled eggs because that extra air makes them easier to peel.

Absolutely use them. They should be fine. Sure would hate to throw those

expensive eggs away, a small fortune these days.

I once had a carton of eggs, pulled one out to crack in a bowl, and it didn't crack. I tried again and it was hard as a rock. I wondered if it had frozen since my fridge was all over the board temp wise. So I picked another and it cracked normally. Next one too, The first one, nope. I was afraid to try further, not sure what I would find so tossed. Any idea what would make an egg so hard to crack?

I'm the only one with this position here so far but for me, mine get used or tossed by that exact date.

@santorini No.  You are not alone.  Dairy, eggs, anything that has just a dab left in a jar or carton--OUT it goes!

We have chickens & only eat fresh eggs & they last for weeks.  The ones in the store are weeks old.  If unsure drop in cold water & they should sink immediately.
