I've been away for awhile and just noticed my carton of eggs says

"best if used by 11/22" should I use them or toss?

Most info says anywhere from 1-2 even 3 weeks. Also I've read many that say if the egg sinks in a bowl of water, it's fresh if it floats, it's old and that is because air has  replaced the water in the egg as it ages.

Use them.  I am using eggs dated the 18th, they are fine.

I would use them although I might hard boil them and make egg salad sandwiches.

@homedecor1.  I'd use them.  Eggs keep a long time.  That date is the optimum for taste and texture but doesn't mean they'd become dangerous.

While I pay attention to expiration dates on most things, with eggs I don't.  

 

I don't even look at the date when I buy eggs.  Sometimes I use them all quickly; sometimes they hang around in the fridge for weeks on end.  It all depends on what we're eating as to whether or not they get used.

 

I never throw eggs out.  They get cooked and eaten even if they are old.  They've always been fine and no one in my house has ever gotten sick from an egg.

 

And I'll tell you what, I lick the beaters when I make cakes and I taste (repeatedly) my chocolate chip cookie dough as I'm baking cookies -- and I've never gotten sick from that either!

If you put them in a bowl in water and they don't float to the top supposedly they're good.

I agree with the other posters - absolutely use them.  Another product where I ignore the date is yougurt - an unopened yogurt carton is good literally weeks after the sell by date.

@homedecor1  I'd most likely use them.  I use the water float check.  If they rest on the bottom, they are fine for everything. Puddings and creams especially.  If they are on the bottom but upended I use them for baking etc.  Dancing in the bottom is for Hard boiled.  Floating towards the surface = Bye Bye.

The eggs float because gasses build up inside the shell as the egg gets older. The more it floats the older the egg.  I won't use a truly floaty egg.  but I've heard  a hard boiled egg made with fresh eggs is harder to peel so I use the older eggs for that.

I'M still here after eating many many eggs that have shown expired expiration dates.I usually make large omelets out of them for a dinner to use up.Not afraid at all to use also  in baking recipes everything comes out good and tasty. 

Really  think  expiration dates are more so for the stores to know to get them sold by such a date.
