I have on hand - cornmeal, butter, buttermilk and a can of creamed corn. I'm looking for a truly moist corn muffin recipe. I haven't found one yet.

I need the same. Every recipe I make comes out dry and crumbly.

I'm thinking of trying these that I just Googled up.
The ingredients are very ordinary. Maybe it's the technique that makes a difference. I will be sure to update with a review.

I found this recipe on youtube. It's called Disneyland muffins, supposedly that's how they make them there.
2 pkgs. Jiffy Corn Meal Muffin Mix
1 box Betty Crocker Super Moist Yellow Cake Mix.
Mix the corn meal muffin mix and the cake mix in separate bowls, following the recipe on the boxes. Then mix them together , pour into prepared pans and bake at 350 degrees I forget how long. I haven't tried it. I have had no luck making cornbread muffins and finally gave up. I think this recipe might be good but must be pretty fattening.

Well, that's interesting. I have the other recipe in the oven right now and I'm not very hopeful. Something doesn't look right.

Okay, they're out of the oven and they look like they will be as moist as promised. I'm not happy with the shape of them. They didn't poof up like my muffins usually do and I'm fussy about appearance. Could it be because I used buttermilk instead of regular milk? They look good otherwise.

As soon as I get my muffins out of the oven, I cover them with foil. It causes moisture and the muffins to be moist.
Another thing, is not to overbake them. I use a toothpick to check the center. I don't wait till it comes out clean.

After you mix your batter, do you let it stand for a few minutes? Then stir and fill your pan.

The Jiffy of 40+ years ago is not the same now. They used to be very, very good.
