I use Jiffy Mix, but I add 2 eggs where the box just callls for one.

Me too, I add an extra egg yolk to the Jiffy mix. My husband will use the creamed corn.

I do not add liquid - in its place I use sour cream. This makes it moist and fluffy. Even when mixing it you can see the difference.
