PISTACHIO BREAD
Pistachio Bread
1 box yellow cake mix
1 box INSTANT pistachio pudding mix
1 cup sour cream
1/4 cup oil
2 tablespoons water
4 eggs, mixed in a bowl before added to dry ingredients.
1 cup chopped PISTACHIO NUTS
cinnamon, (about 1T)
sugar (about 1.5T)
Mix together. DO NOT USE A MIXER. Grease 2 loaf pans well. Make a mixture of cinnamon and sugar. Dust the pans with cinnamon sugar. mix cake mix and pudding mix together in bowl with fork. Add rest of ingredients, and mix well. Try not to overbeat. Divide and pour batter into pans. Sprinkle the tops with cinnamon sugar. Make more if you need it. I sprinkle lightly with crushed pistachios . Bake at 350* for 45-50 minutes.

This is a cute story my friend told me today.
She had bought several food items at our local gift shop for her parents anniversary. One item was pistachio nuts. Her Father called a couple of days later to tell her that the nuts that she had bought were molded.

Added to above recipe. I like to use salted and roasted pistachios. But you can add roasted almonds or nuts of your choice.
I actually made this recipe organic.

Love them. I buy them once and a while as a special treat. Usually get them in the grocery store.

I buy at Costco. They sell a bag of shelled, plain (not salted, not roasted) pistachios. OMG, I can eat them by the handful.

That is something that doesn't come into the house very often, as I will eat the whole bag in one day. No control whatsoever over them.

I get mine at Costco, but will try TJs and Aldis as per this thread. I have a Chinese friend who is just nuts about adding nutrition to the meals she makes for her family. She always has steamed white rice, but she adds small amts of other grains to the rice cooker, AND a handful of pistachios! I copy that now. - Bird
