made a double batch of tuna salad.  having it on toast.  on a bed of lettuce.  and on ritz crackers.  prime days had wild planet albacore and wild planet skipjack for $26 and $29 a case of 12.  great deal!

 

making alot of green salads with various veggies, various protein and various dressings.  cool and refreshing.

 

did a bone in turkey breast in slow cooker.  does not heat up kitchen.   having turkey as main, turkey on toast, turkey on green salads. i love cold turkey.   delish

 

keep filling a bowl of boiled eggs in fridge.  nice cool snack.  and great on salads

 

made greek yogurt and cherry popcicles.  so very good.  44 calories each!

 

frozen cherries and grapes in freezer.  yummmmmm

 

keeping bottles of waterr enfused with my fav in freezer.   

 

having lunches of cold meat, cheese n veggie platters.

@TheMemphisVette    You have a lot of great choices. Chicken, tuna and turkey are wonderful, you can do so much with them.

 

   I never froze grapes or cherries. I'll have to try that. Your cherry

popsicles remind me of the fruit juice popsicles that I used to make in Tupperware Ice Tups, when my children were young.

 

    Yesterday, I sliced some very ripe bananas and froze the slices.

My daughter told me how she puts the frozen slices in the food processor and it is like banana ice cream. I'm going to try that.

 

    I think we will be having tuna sandwiches tomorrow night.

Fresh fruit, Mac and cheese, and tuna salad all sound great.  Then comes the ice cream - piled high.  Grilling in evening way too hot for DH.  We love taco salad in summer.

We have what ever we are in the mood for, but try not to heat up the oven on extremely hot days.  We like to keep it simple.

 

Stir fry, tacos, BLT, tuna or other kind of sandwich.   Grill out or stove top or Ninja  grill.  Sometimes just salads, brats or burgers.  I like a good pasta salad too.  

 

Tonight we did pizza and had a pool party with the grand kids.  Refreshing.  Did carryout.

@Enufstuff  It going to get worse on Saturday (over 100F) and all of next week will be the same.  I don't think the heat wave will end by August.....It's making me ill walking out of air conditioned work to get hit by the heat.

  This evening I made Pina Coladas and a very simple dinner.

From my basil plant, I made pesto and mixed that with cooked

penne. I have also done that using bow tie pasta. Sometimes I add shrimp to the dish. No shrimp tonight.

     Later I had a dish of chocolate chip ice cream.

 

    Tomorrow it will be hot again and more humid. I think that I

won't do any cooking and just get submarine sandwiches for dinner.

Pasta salads are my go to. Cold ones . I like to add protein of some sort and veggies.

 

The other day I had walked outside , got our mail, watered the bird baths and a few plants and found it exhausting Smiley Happy.

DH & I had had a late lunch and not much of an appetite so I had a bowl of popcorn (love the small glass popper from L&L) with some cheese cubes and almonds thrown in. DH called upon his culinary skills spreading peanut butter and butter on bread . I believe he named it a sandwich.

 

For drinks I will now and then have a smoothie with fruit & spinach or kale thrown in for vegetable. I also like iced juiced watermelon pieces. I purchased the small Dash brand juicer. It is one of the easiest to use and clean that I have ever had.
