David's Southern Fried Chicken

I just printed out David's recipe for Southern Fried Chicken. I think there must be a misprint. What's up with the first item under "Flour Mixture" - "2 lbs. boneless skinless chicken thighs, chopped"?? Why? What for? I'm totally confused. Can someone help?
