as we scroll I am trying out the idea to carmelize(sp?)onions in the crockpot. There are endless You Tube videos on the how to. I always look for Nicole(can not remember last name) from All Recipes. She has some great ideas & recipes.

One of my favorite recipes is from my original crockpot booklet (100 years ago?)😁 a spinach, cheese, & egg dish.

I like to clean whole potatoes ,rub with oil or butter and cook until done--no liquid. Some people wrap in aluminum foil , I do not find that necessary.

I have a 6 qt. Hamilton Beach and a small --3(?)qt. which are great sizes for the 2 of us. I do not like have a lot of leftovers to freeze,so those sizes work perfectly & are light weight.

@soxfan

2 10 oz.pkgs. of frozen spinach/thawed & drained

2 cups of cottage cheese

1/4 cup of butter cut into cubes

1 1/2 cups cheese shredded or cubed

3 beaten eggs

1/4 cup flour

1 tsp.salt or to taste

Combine all in mixing bowl and pour into greased crockpot

high for 1 hr.then low for 4-5 hours

I cut the ingredients in half lately for just DH and myself (using 2 eggs) I have found it freezes well though when I used to make full recipe and freeze leftovers. I use my 3 cup(?) crockpot for the half recipe and a little less time--keeping eye on it

@okaywitheasypay : Thank you for sharing! It sounds really good. I can't wait to try it.

I just bought a new really cute 4.5 qt CrockPot. I previously donated a larger one. I gave up on the InstaPot. I only used it twice! It's just too large for two people, so I'll be donating that also.

Re: Crocktober!!!!!

[ Edited ]

@kitcat51 ..............The size depends on the amount of food you normally cook.  I have an 8qt CrockPot slow cooker and the only time I fill it is cooking soups, ham & beans, chili, Johnny Marzetti, etc.  I suggest digital and one with a lot of cooking choices.  Slow cooker is would recommend they have the most cooking choices.

Here are names of a couple of websites for crockpots.

Crockpot Recipes.com, Magical Slow Cooker.com

Hope you heal quickly, take care.
