On facebook today I saw the White Lily Community page had Crocktober featured in a cute calendar with a crockpot recipe for every day.  Maybe not all healthyWoman Embarassed but some great ideas for meals--crock based or not.

So do you have a favorite croctober recipe of your own?  My easiest one is boneless, skinless chicken breasts with a little salsa around them in a crockpot.  I like to serve them with rice cooked with broccoli in it.

ANYTHING cooked in a crock pot is wonderful!! I like soups and pot roast and I do cook bone- in spare ribs that has my moms recipe for a BBQ sauce covering it. The  smell thru out the place is amazing!!! Have done corned beef in it. Scalloped spuds with ham too. Haven't used it to bake in tho---not sure why. I've done a whole chicken in it.

Love crockpot meals. Really like a good bean and ham soup especially the 15 bean soup with cornbread or sometimes I make dumplings.

I'm stuck at home with broken ribs watching YouTube crockpot recipe videos & decided I need a crockpot..I'd appreciate suggestions on size, manual or digital,  manufacturer & if lid clips are a must have. The first recipe I'll make is a YouTube favorite, chicken, stuffing & green beans...I need comfort food!

@kitcat51 Oh, my! Sorry to hear that you have cracked ribs. Hope you heal well and soon. Is there anything that can be done besides taping the ribs?

Best wishes,

Saturday, I made a beef stew in my crockpot.  I make a huge batch every year at this time.  It has 2 lbs. of stew beef, onion, package of tri-colored baby potatoes, carrots w/ beef broth, crushed tomatoes and seasonings.  My recipe also calls for peas but I forgot to buy any.  I normally use frozen peas.

Knowledge is knowing that a tomato is a fruit, but Wisdom is knowing not to put it in a fruit salad.

Thanks @Solar Is My Name you're so kind. I'm lucky they're clean breaks, no chips. I'm 75 so no tape or wraps that might restrict breathing, just holding a pillow to my chest & resting....it hurts but slowly getting better & I'm grateful.

Re: Crocktober!!!!!

[ Edited ]

@Sooner - Years ago I made chicken breasts (boneless) and celery in the crockpot. I am going to try to find the recipe, but it's for two people and it's been years since I made it.

Someone here might know the recipe. I can't even remember where it came from!

@Sooner - I found the recipe! I guess it's for more than 2 people. I made it a lot before we had children. Smiley Wink   So easy!

Crock Pot Chicken

4 boneless, skinless chicken breasts

2 stalks celery, chopped

1/2 cup chopped onion

1 tsp. garlic salt

1/4 tsp. curry powder

1 Tbsp. dried parsley

Put all ingredients in crock pot. Do not add water. Cook on high for 2-1/2 hours.

I thought of another recipe everyone always asks me about. I've posted it before, but just in case:

San Antonio Chili

2 lbs. skinless, boneless chicken breasts

3 (16 oz.) cans Great Northern beans, drained and rinsed

1 medium onion, chopped

1 clove garlic, minced

2 (4 oz.) cans whole green chilies, cut in large pieces

2 tsp. ground cumin

1 tsp. ground oregano

1 1/2 tsp. cayenne pepper

1/2 tsp. salt

1 (14 1/2 oz.) chicken broth

1 cup water

Cut chicken in one-inch pieces and brown if desired (I don't brown.). Put all ingredients in Crock Pot and stir to mix. Cook on low for 10 hours, high for 6 hours.

My favorite Crockpot Dish is:

Turkey Wings

Cream of Mushroom Soup

Onions & Garlic

Celery, Carrots

Mushrooms (sliced or whole)

1 pkg. of Turkey Gravy Mix

Cook on HIGH for 4-5 hours

Serve over Rice or Mashed Potatoes (with a green Veggie on the side)

Oh, and don't forget the Crockpot Liner - Makes clean-up a breeze! Smiley Wink
