I'm rechecking my cb's for more variety or ones I marked to try and haven't yet. This winter, I want to use that crockpot till it hums!!! LOL Easier for me to do some of those type of meals now. Set it and forget it. My kind of doings now.
Anyone have a favorite one they've tried lately? Or one you do when the snow/cold comes?

I made Chicken Enchilada Soup from Skinnytaste.com this weekend. Very good.

I made one the other day that was really good. I used a smallish oval crockpot, don't know the size, maybe 3 or 4 qt.
Layer each ingredient in this order.
I chopped up 3 medium potatoes (skin on) in bite sized pieces. Lay in the bottom.
2 medium sweet onions sliced.
2 layers of thinly sliced carrots. I used carrot chips presliced from the store. I cut the chips smaller and steamed them in the micro. until paritally done.
1 pound of lean hamburger browned first.
1 regular sized jar of savory beef gravy (can't remember the brand I used) mixed with 1/4 cup water. Pour the gravy/water over the top.
Lay a piece of tinfoil over the top, bending the edges so that it fits in the oval shape and then the crockpot lid. That keeps it from drying out.
I cooked on high for an hour and about 6 hours on low. Check on a couple of hours before it is done. If the beef is drying out, take a spatula and pull the meat away from the sides. Cover it back up with the foil and lid.
Be sure and poke clear through with a fork to make sure the carrots and potatoes are tender before serving. If they aren't tender, cook longer.
It was delicious.

@mima, Thank you for that! Copied that and I'll add it to the folder of meals I want to do this winter. I really want to use my crockpot more. I have a few cookbooks on crockpots but, it's always good to widen that group. Good decent hot meal on a cold day, can't be beat!!

I like Ranch Chicken. It's super easy with only 4 ingredients and you can use it to make tacos, nachos, burritos, or quesadillas.
